Spiced cranberry, cedar, and mushroom opens on the nose. The palate is full of red fruit, earth tones, and florals mixed with herbs. This wine finishes with red cherry skins, fine tannins, and balanced acidity.
Sourced entirely from Danforth Ridge Vineyards in Hillier. Destemmed with no crushing and cold soaked for 3-5 days. Fermented in 1 tonne batches then aged for 18 months in seasoned French oak barrels. Full malolactic fermentation in barrel.
Serve with pasta in red sauce, grilled sausages, or grilled vegetable panini with aged white cheddar.
